It’s the annual Pancake Day and this year, the day falls on 25th February. For many Christians around the globe, Pancake Day, Pancake Tuesday or Shrove Tuesday precedes Ash Wednesday, which marks the beginning of Lent. For 40 days, many people give up gorging on fatty foods to commemorate when Christ spent 40 days in the wilderness before he was crucified on the cross. Historically, people would prepare themselves for such a period of reflection and repentance of sin by using up ingredients such as flour, eggs, sugar and milk to make pancakes. It was a mega-treat back in the day.
Nowadays, people stroll into the supermarket to buy ingredients, if they didn’t have any or buy ready-made ones. But, nothing beats home-made goodness. For most people, Pancake Day is a day to look forward to on the annual calendar. If you have young children, they will be bugging you about pancakes, especially after a long day at work! Learnt that my children were not interested in ready-made pancakes, it was the experience they were after. They didn’t mind flat, wonky, slightly burnt ones I always seemed to produce. The art of making pancakes looks easier on the telly, but in my experience, I’ve always found the process messy, if not stressful. Every year, I'd tell myself that perhaps, I needed to upgrade my pan; talk about blaming your tools! Not sure how many pancakes I've binned, but binned a few I have...
If you are like me, or if the thought of baking makes you feel a bit uneasy, fear not! May I suggest a better and easier way to celebrate Pancake Tuesday this year. Your children, work colleagues and most demanding critics will thank you for your efforts. Not only that, this cake is simple to make; novice bakers, and young children will find the process quite fun and stress free. All you have to do is measure up the ingredients beforehand, and mix them up together in one go.

Made this cake over the weekend. As previously mentioned, it was surprisingly easy and tasted heavenly. Shared mine with staunch critics, let’s just say it went down a treat! Children who vowed that they don’t like lemony cakes asked for more. A neighbour and friend with a sophisticated palate and not much into cake said she enjoyed it with a cuppa, couldn’t wait to have another slice. "Light, lemony and simply beautiful," were her exact words.
As a ‘seasoned’ cook, I didn’t follow Mary Berry’s recipe to a T. Over the years, I’ve perfected a tried and tested method which always guarantees light and fluffy sponge cakes. Not a big fan of icing or marzipan, and my cake decorating skills are close to zero, but I’d like to think that when it comes to sponge cake, I'm a bit of an expert. Will highlight where I made slight changes, in case it might help someone.
